Avocado Dill Dressing Recipe

Ingredients:

1 large ripe avocado
1 cucumber, peeled and cut into chunks
2 tablespoons of cold pressed, extra virgin olive oil
1 tablespoon of lemon juice
2 teaspoons of dried dill
Sea salt, to taste

Directions:

Blend all ingredients in a strong blender until smooth. Enjoy this refreshing and healthy dressing on fresh salads, steamed vegetables, and whole grains.

Savoury Squash Soup Recipe

Ingredients: 

2 large acorn or 1 butternut squash
1 large spanish or any yellow onion, roughly chopped
1 clove of garlic, finely chopped
3 cups of vegetable broth
Sea salt, to taste (optional)

Directions:

Cut squash into halves and place skin side down in a casserole dish. Cover with foil and bake at 375 degrees Farenheit, or until tender. After it cools enough for you to handle, scoop out the flesh.

In a fair sized pot, boil onions and garlic in vegetable broth until tender. Add the cooked squash and sea salt. Blend all ingredients with a hand held blender or in a conventional blender if you like a smooth, creamy soup.

Cold Korean Noodles with Sesame Dressing Recipe

Dressing Ingredients:

1/4 cup vegetable broth
3 tablespoons unpasteurized honey
2 tablespoons organic tahini
1 tablespoon rice wine vinegar
1 tablespoon sesame oil
1 tablespoon naturally brewed soy sauce or tamari
1 teaspoon minced garlic

Egg Salad with Artichokes Recipe

Ingredients:

5 soft-boiled organic eggs, peeled and chopped into bite-size pieces
1 can of artichoke hearts, drained and chopped into bite-size pieces
1 small tomato, chopped
1/2 avocado, chopped
1 small green onion, chopped
House Dressing, to taste

Directions:

Tomato Omelette Recipe

Ingredients:

2 organic eggs
1 fresh field tomato, chopped
1/2 avocado, sliced
Few leaves of fresh basil, torn into pieces
2 tablespoons of extra virgin olive oil
Sea salt, to taste

Directions:

Warm olive oil in pan using low to medium heat.

Use fork to whisk eggs in medium-sized bowl and mix in tomatoes, fresh basil, and sea salt to taste.

Pour eggs, tomatoes, and fresh fresh basil mixture into pan, covering the pan evenly.

Check the underside of the eggs with a flat spatula after a minute to be sure that eggs are not browning. If they are browning, flip it upside down.

When eggs are cooked through, fold in half and serve with avocado slices on the side.

Creamy Sunflower Dressing Recipe

Ingredients:

1 cup of raw sunflower seeds
1/2 clove of garlic
Juice of 1/4 of a lemon
1 teaspoon of raw honey (optional)
Sea salt, to taste
Water

Directions:

Pine Nut and Basil Dressing Recipe

Ingredients:

1/3 cup of raw pine nuts
1/2 cup of fresh basil leaves
1/3 cup of water
2 tablespoons of freshly squeezed lemon juice
2 small cloves of garlic, peeled
1 and 1/2 teaspoons of sea salt
3/4 cup of cold pressed, extra virgin olive oil

Mango Avocado Dressing Recipe

Ingredients:

1 ripe avocado
1 ripe mango
1/2 lemon, freshly squeezed
Sea salt (optional)

Directions:

Margaret's Mushroom & Sweet Brown Rice Risotto Recipe

Ingredients:

5 cups button mushrooms, sliced thin
1 medium onion, chopped
1 cup sweet brown rice, uncooked
5 and a half cups chicken or vegetable broth
Sea salt to taste
2 Tbs. olive oil

Directions:

1. Cook the rice in a covered pot in 2 and a half cups of the broth. Wait until it's fully cooked before doing anything else. The rice is done when it's soft. The cooked grains should stick together slightly, as it is sweet brown rice.

2. In a medium or large pot, saute the onion in the olive oil. When onion is soft, add the mushrooms and a pinch of sea salt.

3. When the mushrooms are soft, add the cooked rice and sea salt to taste. Add the rest of the broth (3 cups) and mix until everything is well-incorporated.

Moroccan Vinaigrette Dressing Recipe

Ingredients:

1 cup of cold-pressed, extra virgin olive oil
1/2 cup of freshly squeezed lemon juice
3 cloves of garlic, pressed or finely minced
1/2 cup fresh parsley, chopped
1/2 cup fresh cilantro, chopped
1 teaspoon of ground toasted cumin seeds
1/2 teaspoon of cayenne pepper
1 teaspoon paprika
