Classic Gazpacho Soup With Avocado Salsa Recipe

Ingredients:

2 1/4 pounds (1 kg) tomatoes
1 cucumber
1 red pepper, seeded and chopped
2 garlic cloves, chopped
Juice of 1 lemon and 1 lime
2 tablespoons of extra virgin olive oil
Sea salt and ground black pepper (optional)
1 ripe avocado
1/4 red onion

Directions:

Persimmon Pie Recipe

Crust:

Ingredients:

1 cup of almonds, soaked for 6 to 12 hours, then drained
1 cup of dates, soaked for 1 to 2 hours, then drained

Directions:

Please note that if you are pressed for time, you can make the dough/crust of this pie without soaking your almonds and dates.
