Coconut Chia Pudding Recipe
Quantities listed produce approximately 2 substantial servings of coconut chia pudding.
Ingredients:
1/4 cup chia seeds
1 cup unsweetened coconut milk (store bought, homemade, canned, any type will do!)
Toppings:
Fresh mango
Blueberries
Blackberries
Chopped walnuts
Dash of cinnamon
Optional toppings:
Honey
Turmeric
Any type of seed or nut
Nut butter
Directions:
1. Add chia seeds to bowl and pour coconut milk over them.
2. Whisk chia seeds & milk together with a fork. Make sure to whisk to the bottom of the bowl so that all chia seeds are soaked.
3. Place in refrigerator. Whisk again after about 30-45 minutes and let chia seeds soak overnight (or at least for 3 hours).
4. Add your favorite toppings and enjoy!
