Guacamole for Days

This is the ultra simple guacamole that I have been making about once a week as of late - to see our boys gobble it up with stone-ground baked corn chips is the most satisfying thing. Just 3 ingredients, 4 if you count sea salt. Hope you have a chance to try and enjoy with loved ones.

Ingredients:

Avocado, skin peeled, seeded, and flesh cut into rough cubes
Diced red onion (one tablespoon for each avocado)
Lemon or lime
Sea salt

Directions:

1. Combine cubed avocados, diced red onion (one tablespoon for each avocado), and a drizzle of lemon or lime juice to lightly touch all avocado.

2. Gently mash with a fork while seasoning with sea salt, to taste. For homemade mouthfeel, don't overmash - it's always a beautiful thing to have some unmashed avocado chunks in your guacamole. :)

3. Store in an air-tight container in the refrigerator. To prolong freshness and prevent premature discolouration, place a few slices of lemon or lime on top of your guacamole before closing the lid to your container.
