Mashed Garlic Sweet Potatoes Recipe
Posted by Dr. Ben Kim on Nov 17, 2005
2 large sweet potatoes, peeled and cubed
1 and 1/2 tablespoons of unsalted, organic butter (omit if dairy-free)
1 garlic clove, minced
Sea salt and ground black pepper (optional)
Boil sweet potatoes for approximately 15 minutes or until quite tender. Drain sweet potatoes and put them in a big bowl.
Add butter, garlic, salt, and pepper. If you're avoiding dairy but want to impart some silkiness to your mashed sweet potatoes, add a splash of extra-virgin olive oil.
Mash with a fork until smooth and creamy. If sweet potatoes are a bit too dry to mash into desired consistency, add a touch of almond milk or vegetable broth while mashing.
This delicious sweet potato dish is a good source of carotenoids, vitamin C, and vitamin E.
Best served hot!
