Mashed Garlic Sweet Potatoes Recipe
Ingredients:
2 large sweet potatoes, peeled and cubed
1 and 1/2 tablespoons of unsalted, organic butter
1 garlic clove, minced
Sea salt and ground black pepper (optional)
Directions:
Boil sweet potatoes for approximately 15 minutes or until quite tender. Drain sweet potatoes and put them in a big bowl.
Add butter, garlic, salt, and pepper. Mash with a fork until smooth and creamy. If sweet potatoes are a bit too dry to mash into desired consistency, add a touch of almond milk or vegetable broth while mashing.
This delicious sweet potato dish is a good source of vitamin A, beta carotene, vitamin C, and vitamin E.
