Cucumber and Red Onion Salad Recipe

Cucumber and red onion slices combine to make a refreshing, crunchy, and sweet salad dish, perfect for the dog days of summer. If you can find smaller cucumbers, the kind used to make dill pickles, use as many of them as you need to substitute for the 3 conventional cucumbers that this recipe calls for.

The quantities listed in the ingredients section make approximately 6 servings.

Ingredients:

3 cucumbers, thinly sliced
1 small red onion, halved, then thinly sliced
3 tablespoons extra virgin olive oil
1 1/2 tablespoons apple cider vinegar (or any other type of vinegar)
1 tablespoon liquid honey
Sea salt and black pepper, to taste

Directions:

In a large bowl, whisk together extra virgin olive oil, vinegar, honey, salt, and pepper until well blended.

Add thinly sliced cucumber and red onion, then toss well to combine.

Enjoy this cool and refreshing cucumber and red onion salad.

Hi Dr. Kim,

That is a good salad. My mother made it when I was a little girl. I never knew anyone else who had cucumber and onion salad, except she did not cut the onion slices in half . . . she separated the rings. It's sooooo good. I'm 64 years old, so have been eating it for a long time.

Another cucumber salad that I have liked was invented by a friend of mine when she had nothing else to take to a church picnic. It is fresh corn or frozen corn (thawed), chopped cucumbers, mayonaise and salt and pepper, all stirred together and chilled. It tastes much better than it sounds. She has tried adding other things to it, but it just isn't as good. It's an easy salad to take to a potluck or picnic.

I had to laugh when I saw the recipe, here we use Vidalia onions ( guess where I live, lol) instead of red but this is a staple for gatherings and during the summer this had accompanied so many summer evening dinners I couldnt even count. Most of the time, the oil isnt even added. Last night I made it with a new vinegar I got- pomegranate red wine vinegar- and it was so yummy. Ive also eaten it dressed with a sour cream and mayo dressing with some dill weed and parsley.

You can even add fresh tomatoes to this which makes it even more delicious.
