How to Make Mouthwatering Mashed Garlic Sweet Potatoes
All varieties of sweet potatoes provide vitamin C, carotenoids, fiber, and vitamin B-6 (helpful for keeping homocysteine at a healthy level), and even minerals like iron manganese, and potassium.
Orange-flesh sweet potatoes are more moist and contain more carotenoids than yellow-flesh varieties. But for variety, give red-skin, yellow-flesh sweet potatoes a try - they're popular in most Asian and African countries, and their hardier texture makes them taste more like traditional mashed potatoes, but with a natural layer of sweetness. - Ben Kim
This mashed garlic sweet potato recipe is a wonderful choice for cool autumn days. Enjoy!
Ingredients:
2 large sweet potatoes, peeled and cubed
1 and 1/2 tablespoons of unsalted, organic butter (omit if dairy-free)
1 garlic clove, minced
Sea salt and ground black pepper (optional)
Directions:
Boil sweet potatoes for approximately 15 minutes or until quite tender.
Drain sweet potatoes and put them in a big bowl.
Add organic butter, garlic, sea salt, and pepper. You can skip the butter if you are avoiding dairy. If you skip the butter but want to add a bit of silkiness to your mashed sweet potatoes, add a splash of extra-virgin olive oil.
Mash with a fork or potato masher until smooth and creamy. If sweet potatoes are a bit too dry to mash into desired consistency, add a touch of almond milk or vegetable broth while mashing.
