Chickpea Salad Wrap Recipe

Ingredients:

1 can of chickpeas, drained and well rinsed
1 rib of celery, finely chopped
2 tablespoons of black or green olives, chopped
3 tablespoons of dill pickles, finely chopped
2 tablespoons of red onion, finely chopped
2 tablespoons of sun-dried tomatoes, chopped
1 small avocado or 3 tablespoons of mayonnaise
Sea salt and pepper, to taste

Directions:

1. Mash chickpeas in a large bowl to a consistency that you like.

2. Add all other ingredients and mix and mash together with a fork until it looks something like chicken salad sandwich filler.

3. Scoop chickpea salad on lettuce leaves, corn tortillas, sourdough bread, crackers or anything else on hand. You can even serve this over a bed of rice or quinoa.

Thanks for the recipe, it looks very good. I was wondering if you know a good way to remove the hulls from the chickpeas. I don't like them because I think they are tough to chew, so I remove each hull off the chickpea one by one and then they taste great? Just wondered what your thoughts are about this?

soak them in h20 & stir. It removes salt and the hulls will float to the top of the H20.

This lettuce wrap made a great summer lunch. I did mix in a spoonful of mayo/sour cream just to help hold it together.
