Citrus Salmon Recipe

Ingredients:

2 filets of fresh wild salmon, skin removed
2 cups of orange juice
1 red onion, chopped
2 tablespoons of olive oil
Sea salt and pepper, to taste

Directions:

Bring orange juice to a hearty simmer.

Add chopped onions and olive oil and let simmer for 5 minutes until the mixture reduces by about half.

Add salmon and season with sea salt and pepper.

Cover with a lid and steam for five minutes.

This bright salmon recipe serves two people and is best served with a large serving of steamed vegetables or vegetable salad. It was adapted from a recipe by Chef Michael Smith of Food Network Canada.
