Shelby's Sweet Potato Fries



3 medium or 2 large sweet potatoes
2 tablespoons of coconut oil (melted)
1 teaspoon of smoked paprika
1 teaspoon of curry powder
Pinch of sea salt
Chopped fresh cilantro for garnish


1. Preheat oven to 410 degrees F.

2. Wash sweet potatoes and pat dry, no need to peel.

3. Slice sweet potatoes into fries - note that consistent sizing of slices will make for a more even bake, and they will shrink a little bit after cooking.

4. Place sliced sweet potatoes in a bowl & toss with coconut oil. Add in paprika, curry powder, and a pinch of salt, and toss to coat evenly.

5. Place fries onto parchment-lined baking sheet so that they are spaced out and not stacked on top of each other. Bake for 15 minutes, then take out of the oven and flip the fries over. Place back into oven and bake for another 15 minutes or until they reach desired crispness.

6. Garnish with another pinch of salt & fresh chopped cilantro.
