Winter Kale, Apple & Pepita Salad

For the salad:

A few generous handfuls of fresh baby kale (or any other leafy greens)
1/4 green apple, cut into thin slices
1/4 cup pepitas (I use roasted & unsalted)
Black pepper to taste

For the dressing:

1/4 cup tahini*
1/3 cup water*
Pinch of sea salt
Juice from 1/2 lemon
1 clove of garlic, finely chopped
Black pepper to taste
Optional: 1 tablespoon fresh chopped basil


1. Whisk all dressing ingredients together until fully incorporated, adjust for taste and consistency as you desire.

2. Add salad ingredients to bowl and toss in the dressing.

* The quantities of tahini & water included can vary depending on the thickness of your tahini - if it is on the thicker side, you will likely need more water than if it is lighter in consistency. You can add more water or tahini to suit your palate.
