Low Carb Bagel Bites Recipe

Ingredients:

2 cups almond flour (blanched, super fine grind)
1 cup unsweetened yogurt - thick, Greek-type is best, dairy-free is fine
Bagel seasoning blend (optional, or can use your own blend of salt, sesame seeds, poppy seeds, etc.)

Directions:

1. Pre-heat oven to 350 degrees F and line a large baking dish or tray with parchment paper.

2. Combine almond flour and yogurt in a large bowl. Mix with a fork until the ingredients come together to a doughy consistency. I find Costco's Kirkland Signature almond flour to work well. Add a little more flour if the dough is too sticky.

3. Spread bagel seasoning out on a flat plate or cutting board.

4. Scoop out dough one tablespoon at a time and roll into balls, then roll balls in bagel seasoning.

5. Spread seasoned dough balls on lined baking sheet and bake for 21 minutes, give or take a few minutes - ideally, you want to see a bit of light gold as a slight crust forms.

6. Allow baked bagel bites to fully cool before eating. Enjoy!

Notes:

The longer you allow the bagel bites to cool, the more their consistency will be like real bagels. You don't want them to be too big - about half of what fits into a typical ice cream scoop is a good amount per bagel bite.

Leftovers can be stored in a paper bag at room temperature for a few days. If they are too soft or moist, simply bake them for another 5-10 minutes at 350 degrees F before eating.

I made the bagel bites recipe and it's absolutely delicious! The yogurt gives the bagel bites a sourdough flavor that's irresistible! And they're so easy to make.
