Brown Rice With Walnuts and Dried Cranberries Recipe


1 cup of brown rice
4 teaspoons of finely chopped vidalia or red onion
2-3 tablespoons of chopped walnuts
2-3 tablespoons of dried cranberries
1 large apple, peeled and chopped into small pieces
2 tablespoons of extra virgin olive oil
Sea salt (optional)
2 teaspoons of brown rice or red wine vinegar
4 teaspoons of finely chopped green onion


Rinse rice thoroughly. Bring it to a boil with 2 cups of water, then cook over low heat with the lid on for approximately 30 minutes or until rice is tender.

Combine cooked rice with all other ingredients in a large bowl. Toss well and season according to taste.

This delicous rice dish is best served warm or at room temperature. Enjoy!
