Hearty Chickpea and Leek Soup Recipe

How to Make Chickpea, Leek, and Potato Soup


1 can of chickpeas
2 large or 3 small to medium leeks (most grocery stores sell them in groups of 3)
1-2 small potatoes
Vegetable or chicken broth
Sea salt and pepper, to taste (optional)


If you use a can of chickpeas, rinse them well and bring them to a boil for a minute to help get rid of any preservatives. If you use dry chickpeas, soak them in water overnight and cook them over medium heat for about an hour or until tender.

Cut leeks in half lengthwise and give them a good rinse in water to remove dirt. Chop leeks and potato into bite-size pieces, saute them with olive oil for about five minutes, then add enough boiling broth to cover them and allow them to cook for 7 to 10 minutes or until tender.

Add chickpeas and allow all ingredients to sit on low heat for a minute or two.

Blend ingredients in a food processor or blender. Return blended mixture to pot, and season with sea salt and pepper if desired.

Makes about four servings. Enjoy this hearty soup with avocado slices and a slice of toasted whole grain bread.

what do you recommend for a good vegetable broth, especially for those times when you are short on time? Would a bit of miso or seaweed be a good idea, or another product?

I have a msg free, low salt stock powder that I use in emergencies. I often have some home made stock that I freeze in smallish portions (2 cups a time) so that I can just melt them in the pot when Im in a hurry. I have used miso soup often as a stock and even add a small spoonful to caseroles or whatever needs perking up but dont want more salt. Another good flavoured stock is if you have some frozen mushrooms - cook them gently first before adding other ingredients; or if you havent time to make stock you can soak dried mushrooms for the morning/overnight and then use the water and mushrooms for stock later, when you make the soup. A teaspoon of tomato paste added to whatever stock you are hurriedly making, is also useful. Having dried onions in the cupboard is always a good standby too - I often add it to pasta or rice water - its like cooking them in stock. A combination of any of these I expect would make a good, quick soup stock. Hope that helps a bit.

This was So easy to make! Even my carnivore husband liked it. (with the parmesan cheese) It will become a regular dish on cold nights! Delicious!

This was fast, easy, delicious. The only change I made was I used a half of a sweet potatoe. My husband doesn't like sweet potatoe so this way I could sneak them in something that he would eat
