Shelby's High Protein Flourless Muffins

Ingredients:

1 can of chickpeas
1 cup of rolled oats
4 tablespoons of organic peanut butter
1/2 a cup of organic applesauce (unsweetened)
1 tablespoon of apple cider vinegar
2 teaspoons of vanilla
1/4 teaspoon of cinnamon
1 teaspoon of baking soda
2/3 cup of chocolate chips

Directions:

1. Preheat oven to 350 F.

2. Drain, rinse, and dry off chickpeas.

3. Add all of the ingredients except chocolate chips to a blender or food processor and process until smooth. Transfer to a mixing bowl and fold in the chocolate chips. Your batter is ready.

4. Make sure muffin pan is greased well, and add muffin batter until each well is about half full.

5. Bake for 15-18 minutes. Test to make sure muffin is cooked all the way through.

6. Let cool completely before removing from muffin pan.

We do not have an exact amount of protein for the muffins, but the protein would be coming from the can of chickpeas and the peanut butter.
