Simple Korean-Style Organic Tofu Dish

Ingredients:

1 block of organic tofu (firm or medium-firm)
2 tablespoons of soy sauce
1 teaspoon of sesame oil
A few drops of vinegar (white or rice wine are good options)
Large handful of chopped green onions
Toasted sesame seeds (optional)

Directions:

1. Cover tofu block with cold water in a pot and bring to a boil. Lower heat and let simmer for 3 minutes.

2. Combine soy sauce, sesame oil, and vinegar in a small bowl and whisk well.

3. Drain warmed tofu, chop into bite-size blocks, garnish with chopped green onions, then drizzle on dressing made in step 2. If you have toasted sesame seeds on hand, sprinkle on top just before serving.

Enjoy this simple nutrient-dense and highly nourishing organic tofu dish.

My mom did something similar in Hawaii while I was growing up with cold tofu and additional ingredients on top:
Dried shrimp
Watercress
