Japanese Salad Dressing Recipe
If you've ever wondered how to make salad dressing like they do in most Japanese restaurants, the kind that looks like a light applesauce, I think you'll be pleased with this simple recipe.
Miso and ginger are the star ingredients of this dressing - both are excellent for improving digestive tract health.
Regular intake of miso is my preferred way of ensuring ideal vitamin K2 intake, necessary to support optimal skeletal and cardiovascular health.

Makes about 6 generous servings
Ingredients:
4 small to medium size carrots
1/2 medium size white onion, roughly chopped
1/4 cup ginger, roughly chopped
2 tablespoons miso paste - any variety will do
1/4 cup rice wine vinegar
2 tablespoons raw honey or sweetener of choice
3 tablespoons roasted sesame oil
2 tablespoons extra-virgin olive oil
1/4 cup water
1/2 teaspoon sea salt
Directions:
Blend everything together until smooth and drizzle over your favourite salad ingredients. We often use this dressing with organic baby greens, carrot shreds, cucumber slices, tomato, red onion, and avocado.

Just what I was looking for
Thank you Dr. Kim! I have adored this dressing for a long time, as it is so delightfully refreshing. I bought Makoto brand ginger dressing hoping it would approximate this (found in many stores' refrigerated produce section) but although it contains lots of onions, carrots, celery, ginger etc, it is missing the miso paste which is a key ingredient. Many thanks for this recipe!
