Simple Oats Recipe

Ingredients:

1 cup of organic rolled oats
1 tablespoon of organic chia seeds
Half a teaspoon of ground cinnamon
1 and 1/4 cups of unsweetened plant milk (almond or coconut work well)
1 tablespoon of virgin coconut oil
1-2 tablespoons of maple syrup (optional)
Any toppings you enjoy - nut butter, berries, cherries, dried mangoes, etc.

Directions:

1. Combine oats, chia seeds, cinnamon, almond milk, coconut oil, and maple syrup if desired in a container and gently mix until combined. Secure lid and put in the refrigerator to sit for two hours or overnight.

2. Top with anything you like, add a tad more plant milk if desired, and enjoy!

Is recipe for just one serving? A whole cup of raw oats (article said no cooking required) seems like way too much for a person to eat all at one time. A serving of Muesli, with all the other ingredients in addition to the raw oats, is only a fourth of a cup. I figured the raw oats must expand. Please clarify. Thanks

Serving sizes being uniquely individual, I would suggest that you try using half of all that you see in the ingredients list and go from there. I find that the listed quantities make one full meal for me, but I am quite active and find that I thrive when I eat larger less frequent meals rather than many smaller meals throughout the day.

This is similar to the Birchermuesli recipe I use--I typically make mine with raw cow's milk and add walnuts, apples, and raisins along with the milk to soak overnight, and then add more fruit in the morning. I love it during the summer especially.

I'll have to try your recipe to see if I like it as much. Thank you for sharing it with us.

I tried making this recipe, but the coconut oil is solid at room temperature. Am I supposed to melt the oil before adding it? Am I missing something?

All other oats recipes I've found with coconut oil are cooked, so the oil melts when its added during the cooking process. I'm assuming this recipes involves no cooking as it's not mentioned.

Someone please reply as I really want to give this recipe a try.

Yes if your coconut oil has become solid (most do around 76 degrees), then melting it before would be helpful for this recipe.
