Steel Cut Oats with Chia Seeds and Berries

Some of our readers asked if a recent simple oats recipe would work just as well with unrolled oats, known as steel-cut oats that are typically cooked in boiling water.

What you see above is what you can expect to produce with no heat and just soaking overnight.

Combine 1 cup of steel-cut oats (not the rolled kind that are made to cook within a few minutes) with 2 tablespoons of chia seeds in 1.5 to 2 cups of unsweetened plant milk. Store in a jar with a lid in the refrigerator overnight, but if possible, give things a stir to distribute the oats and seeds once before you go to bed.

The next morning or when ready to eat, add a level teaspoon of cinnamon and a tablespoon of maple syrup if you like a little sweetness, mix well, then serve with fresh fruit toppings.

With unrolled steel-cut oats, I find there is more texture and satiety. The quantities listed above are likely enough for two average adults if you take into account fresh fruit toppings. You can even add some nut butter for added protein, fatty acids, and flavour.
