Easy Healthy Fudge Recipe

This easy and delicious fudge recipe calls for protein-rich almond butter and antioxidant-rich raw chocolate powder, making it a decadent treat that is much healthier than conventional store-bought fudge.

Although this fudge is made with all-natural ingredients, it is best to eat only one or two small pieces at a time, as eating honey-rich foods can stress one's blood sugar-regulating mechanisms.

Ingredients:

2 cups almond butter
1/4 cup raw cocoa powder, sifted to remove any lumps
1/2 cup plus 2 tablespoons liquid honey
1 heaping tablespoon coconut oil, melted (optional)
2 teaspoons vanilla extract
1 teaspoon coarse sea salt

Directions:

Combine all ingredients in a large bowl. Mix until well incorporated.

Spoon the mixture into a pan and flatten with the back of a spoon. Place in the freezer for an hour or so, then take it out to cut into bite-size squares or rectangles. Transfer the pieces onto a plate. Keep these covered and stored in the freezer.

An alternative is to spoon the mixture into candy molds; pop them out when they are thoroughly frozen. They have a chewy texture when frozen.

These must be kept in the freezer, otherwise they will become soft and mushy, to the consistency they were at before freezing. So if you take them out to eat, eat them quickly! Also keep this in mind when cutting the fudge; work quickly.

Good to see the no-fuss fudge recipe. I have been preparing a raw food diet for over a year but find my family (and me) still crave an occassional sweet; however, I do not want to spend allot of time or effort in making it (so the occassional preparation of a cooked or baked dessert like we used to have - which is way not allowed on the raw food diet!) since I perfer to make food preparation as simple as possible. One of my favorite Christmas goodies (before the health crisis in my family caused us to begin the raw food diet) was Fudge. I have always liked chocolate anyway. This recipe was so much better than the recipe I have used for years. Thanks for sharing it and I am open to learning more as I think my family may be ready for new raw food tastes that are simple to prepare and inexpensive to purchase since we only have access to the regular grocery stores where we live. Again, thanks!

I wrote this recipe on a sticky note and left it on my counter until I could get more almond butter. For some reason i thought it was a different recipe for cookies and I threw them in the over for 12 mins @ 350. Delicious as cookies too! However, not as healthy. :)

another idea, a healthy chocolate frosting for cake. mmmmm.

WOW, this was AWESOME! quick and easy to make...wonder how it would work for a coating on almonds and then dehydrated??? ;-)

thank you so much for this ;-) I have 3 children and we try to eat alot of raw foods. Since we homeschool they still haven't had any junk pop or chips and chocolate bars and we are gluten, dairy, soy, corn and yeast free. We've gotten used to no bread or baked goodies. So when I see a recipe like this, I think hmmmm this might be an ideal special treat. The few times my 8 yr old has eaten raw cacao powder, he's gotten nosebleeds. (he's never had junky chocolate bars so I don't know) So I substituted raw carob powder that we get from the Real Raw Food Company out west and also substituted volcanic brand agave for the honey (even our raw honey gives ME a headache! ;-( while there is some controversy about agave, I don't use it often and I feel once in awhile is ok) I used the Maranthana brand raw almond butter although I'd love to get around to making my own LOL Well Dr. Kim, this recipe is INCREDIBLE! Soooooooooo RICH and satisfying- thanks again! I'm absolutely amazed at how it turned out. I'm so glad I tried it!!!! Now if only I can stay out of it and not eat the whole thing! ROFL. Wendy

Ben/Margaret it's Judy, since I'm a Health Nut I like to share ingredients with you...for Fudge how about -CAROB POWDER-Nature's substitute for chocolate it's NUTRITIONAL! for salt how about Himalayan Salt and Kudzu Nature's thickener...Now, to bake CORRECTLY without cake flour mix,eggs,imitation extracts,cow's milk,butter,maragarine,sugar,baking,soda,baking powder and yeast...We people NEED to know What did GOD give us to make Batter and Crusr RISE?..Baking cakes,Whole Wheat Pastry Flour,Chestnut Flour,Coconut Flour and etc.,Pancakes Chestnut Flour,Wheat Flour,Buckwheat Flour and etc.,Oils-Avacado,Olive,Grapeseed and etc.,STEVIA or Apple Juice for Sweeteners... Liquids-Water,Coconut Milk,Soybean Milk or Almond Milk...Genuine Extracts-Bananas Extract,Almond Extract or Rum Extracts and etc.,Muffins,ONLY MEAL...Cornmeal,Chestnut Meal,Almond Meal etc., Don't mix with Flours! unless when baking cornbread...Cookies Coconut Oil to make a thick paste! Nuts go only in the Frosting not the BATTER...Use Gas Oven, place a pan of water at the bottom not Electric Oven Food has to cook from the bottom-up NOT left to right...SPICES Fresh Only! perhaps in our lifetime we will learn How to Bake? Biscuits,Scones,Bread,and Puddings,Jell-O and etc., CORRECTLY!
